There are a lot of hot sauces out there. I don't pretend to have tried them all. But I have tried a bunch of them. And found them wanting. Actually, I found that most of them had way too much vinegar in the seasoning. Sure, they were hot. But they lacked balance.
I was at the Phoenix Airport on a trip, and I grabbed some lunch before picking up the rental car. The restaurant was called Lefty's. I usually don't think highly of airport restaurants, but the food was good at this one. And on the table was a surprise that made the whole trip worthwhile.
This restaurant provided each table with a bottle of Cholula Hot Sauce. Not expecting a lot of flavor from airport food, I sprinkled a liberal dose on my sandwich. And some more on the french fries. Wow. This sauce is everything a hot sauce should be. It is hot. And flavorful. And the vinegar does not overwhelm.
Cholula sauce is available at better grocery stores in the Houston area. I have also spotted it in California and Arizona. So be on the lookout. The bottle has a distinctive wooded cap. Give it a try and I think you will be impressed.
